IIS is a decent webserver but for the best bang go for WebSite Pro.A very bright star on the Mac horizon is WebTen from Tenon. If boasts being able to run WebStar plugins and cgis under a Unix virtual machine. It is damn fast and Tenon has always done a decent job with thier own TCP/IP stacks. You can also choose to use OpenTransport , MacTCP or the Tenon stack. It supports true multi-homing on the Mac today and will be adding SSL in the future.
