From my own testing I have discovered that domains running in their own sandbox *do* require the from address to be a real (non-messed-with) email. However, I have also been surprised to find out that domains not running in a sandbox can use any valid formatted email address, real or not. On many of my customer sites we are using contact forms with the from address simply being website@domain.com. But as soon as I upgrade a customer to a sandbox I have to use a real email address.
